Theresa Paopao hails from the small town of Hilo on the Big Island of Hawaii. She left island life to pursue a graduate degree at the Yale School of Drama in New Haven, CT and then moved to Boston where she fell in love with the restaurant business and the world of wine. In 2004, she joined Ana Sortun of Oleana in Cambridge, first as manager before expanding the role to include Wine Director. In 2010, she moved to New York City to take on the role of Wine Director for David Chang’s Momofuku restaurants. Among other accolades and achivements, Paopao is certified by the Court of Master Sommeliers and is currently completing the Advanced Certification through WSET.
