Domaine Guillot-Broux, Mâconnais, Mâcon-Villages, 2016

Guillot-Broux own 17ha across three villages and two appellations, mostly sited on clay-limestone soils and planted at a high density to encourage quality fruit. The domaine has been certified organic since 1991. This Mâcon-Villages was fermented with natural yeasts in 228 litre barrels and then racked into vats for maturation. It shows soft, peppery apple fruit flavours, with some woody creaminess towards the back. The black pepper spice really lingers on the finish. Drink with grilled chicken.
