A graceful and rich Chardonnay from vineyards surrounding the medieval castle at Castello della Sala in Umbria. Fruit is destemmed and gently macerated for 2-4 hours pre-fermentation which adds a richness and depth that’s lip-smackingly attractive. It’s awake with ripe peach, lime marmalade and toffee notes, but there’s subtlety here and a delicate mineral focus.
