This has little resemblance to standard Bierzo whites, hence it doesn’t bear the official DO. Doña Blanca, Palomino and Godello are fermented in oak then aged for four months under flor giving complex oxidative and nutty characters. It has tension and richness and would be the perfect complement to hard cheeses.
