Claude Mandois owns this boutique Champagne house in Pierry on the outskirts of Epernay, where his wines are aged in cellars beneath the chapel of Pierry’s church. This is the favourite Champagne of Jimmy Boyle, once dubbed ‘Scotland’s most violent man’, but now a sculptor, writer and wine lover. Boyle loves the Blanc de Blancs 2004, which won Best Chardonnay in the World in 2009, but Chardonnay is also prominent in this outstanding 1993, a blend of 40% Chardonnay, 30% Pinot Noir and 30% Pinot Meunier from Pierry, Chouilly and Vertus, with a dosage of 9g/l.
