This is a serious classic Rosé from a house that was formed in 1860 but purchased by Bollinger in 2005. The nose is lean and focused, with subtle red berry notes and a slight biscuity aspect. It produces a fine mousse on the palate which is taut, dry and undeniably geared to accompany food. £45

Ayala has seen a return to form since 2000 when Jean-Jacques Frey joined as a shareholder and brought with him 45ha of vineyard. The rosé is yeaty and elegant with bright raspberry fruit that leads on to some creamy, dark spicy flavours and a juicy finish.
