Considering its distinctly minimalist name, it%u2019s no surprise that this organic property is something of a young buck, established in 2005. This release is quite shy and restrained, but with that nuttiness on the nose one would expect, partnered by a lanolin aroma, and just a hint of apricots. There%u2019s a delightful, salty tang on the tongue, pronounced minerality, striking acidity and a very, very long finish.
