Castle Brook, Brut, Herefordshire 2009
Two hectares of Champagne varietals were planted in 2004 by the Chinn family, best known for producing Asparagus. The wine is made at Ridgeview facility and the 2009 remained on its lees for just under 5 years and for a further 4 months in bottle prior to disgorgement. A fragrant nose opening up to lemongrass and floral aromas. Lively and zesty palate nicely balanced with the yeasty characters and warm brioche finish.
