Winemaker Sebastien Christophe makes his wines in a reductive style and eschews oak in favour of stainless steel. The result here is a zippy, sea-salt-spray-fresh Chablis that is shot through with lime cordial, elderberry and fresh pineapple, finishing with a punch of refreshing acidity.
