From a producer who already follows biological viticultural methods, and will be officially certified organic from their next vintage. This is a big wine, with a fine, well integrated mousse that has had plenty of time to relax - it spends a not-insignificant 72 months on its lees. In that time, it has developed a marvellous complexity. A creamy nose with vanilla and baked apple leads into a broad, slightly oxidised and mineral palate. It has a bright acidity which carries the flavours onto the long finish, where nut, apple and brioche notes emerge.
