Cavit, Altemasi Pas Dosé, Trento, Trentino-Alto Adige, 2009

From grapes grown in the Valle dei Laghi and Valle di Cembra at an altitude of 600 metres. This is a really fresh style, accentuated by the lack of a dosage, although it does spend a minimum of 60 months on its lees. A zippy lemon and steel character is bolstered by creamy vanilla and nut notes. The acidity verges on being tart, meaning this is best drunk with food. The saline finish is absolutely moreish.
