An organic northern Barossa vineyard in the Ebenezer subregion, with hard brown soil that is rich in ironstone, provides Shiraz with gnarly, concentrated flavours that are lean but focused, with steely intensity. Made entirely from whole-bunches that are fermented for three weeks before being pressed into new French oak for only 14 days, this technique captures the vitality of lively, clean flavours before completing 12 months’ maturation in old oak. It gives the long, lean palate a gorgeously supple line, with the fruit sliding easily over the finest gossamer tannins.
