This fizz has aromas of bread, green apple and citrus fruits. More yeasty, savoury biscuit flavours are on the palate, with an undertone of ripe, honeyed yellow apple. It has a creamy texture and a butterscotch roundness, as the base wine undergoes both malolactic fermentation and lees ageing before the second fermentation. The ripe fruit flavours are nicely balanced by a good level of acidity.
