This highly unusual and complex blend, fermented and matured in ceramic eggs, is deliberately groomed as an idiosyncratic white wine. Bone dry, insouciantly savoury and with fruit flavour tones turned way down low to make you concentrate intently on the texture. There's a different recipe for this vintage – more Grenache Blanc (57%), with Roussanne (24%), Clairette (5%), Bourboulenc (6%) and the new addition of Grenache Gris (8%). While a reduced alcohol level brings a more spindly, dry palate that speaks of cider apples, oyster shell, lemon rind, marzipan and dried nashi pear, with lots of grip in the finish.
