Hay Shed Hill, Chardonnay, Margaret River, 2016

This property was once a farm for returned WWI soldiers, the hay shed of its name dating from then. Free-run juice was fermented and aged for 11 months in French oak, giving a restrained yet vibrant palate of melon and orchard fruit with a leafy edge.
