Both the nose and the palate speak of the ocean-ageing process: powerful meaty reductive notes abound, followed by pretty plum skin, red fruit, violets, salted liquorice, vanilla bean and subtle spice. Tannins are seductive and impeccably fine, creamy and supple. It’s like they’ve coated the mouth via a spray-gun. A compelling salinity is woven amongst the iodine and baked earth character, though there’s less fruit on the palate than expected. It’s hard to pinpoint exactly how this will age with so much approachability in its youth from the secondary ferment. Made using Karridale fruit, with 100% secondary ferment in ocean; 60% submarine oak fermented with staves. The ocean immersion was from 7 May to 21 November 2024, with large swells equating to vigorous lees stirring.
