Made from 60-year-old Sémillon vines that lie mostly on a silica clayey hilltop with gravely slopes, this wonderful typicity of aromas on the nose. On the palate, it's less juicy and mouthwatering than I was expecting but it has real structure and depth of flavour with hints of green olive, flint, vanilla and toast. This is a different style to the others in the line-up but one worth seeking out and to pair with a host of different foods.
