Tangy and alive, a focus on the bright, almost tart acidity – a strawberry sherbet aspect before settling to reveal red cherry and plum. Crisp and crunchy, I can see the appeal of this new, vibrant upfront and not too complicated wine style with a focus on the purity of the fruit. Quaffable. Still with a touch of minerality and liquorice spice with wet stones on the finish. Classic elements reinterpreted. 3.65pH. Ageing 14 months, 100% two or more years. This used to be the second wine of Château Cadet Bon but this is a new style made with 100% whole bunch fermentation.
