Mignon ferments his wine in tank and blocks the malolactic fermentation to maintain freshness.  The wine is aged for three years on the lees, and this cuvée is finished Brut Nature.  Even in a lesser year such as 2013, this gives a wine of impressive concentration and enough density and substance to ensure that the lively blossom and green apple notes come to the fore.  While there is plenty of tension and fresh acidity, the wine is by no means tart and has a supple, dynamic texture through the finish.
