Captivating aromas of ripe, cinnamon-coated apples and buttery baked pears, The palate shows refreshing green apple notes and sappiness, with a tight seam of laser acidity. There's a richness to the mid palate which is very well balanced by a sherbet and lime zestiness and a pithy, mineral finish. Lovely. Working biodynamically and respectfully in the vineyards and minimally in the cellar, brothers François and Pierre and father Raoul work closely together to achieve great finesse and character in their Champagnes. The wines are spontaneously fermented and kept on lees for extended periods of time. This 2015 was aged for six years on lees, and the grapes are sourced from a variety of premier cru vineyards in Montagne de Reims. Great care and attention shows through in the wines, this is definitely a producer to watch.
