For all the ambition at the top of the Paillard portfolio, the entry-level Les Parcelles is still the calling card of this small house. Grapes from Bouzy, one of the hottest villages in Champagne, were certainly exceedingly ripe in the solar 2022. Yet the deep, baked apricot fruitiness of the year, along with dried pear, Seville orange and ripe grapefruit, is tethered with gentle acidity and the complexity of brown pastry, savoury spice and white pepper helped by oak fermentation and reserve wines. It's a Champagne that manages to retain youthful energy without sacrificing depth.
