A subtly pale pink in the glass, the aromas are intense and bubbling with sweet wild strawberries and stewed raspberries. It's ripe on the palate, with a hint of bitter almond beneath the red apple skin and cherry fruit character. A good, easy-going pink fizz that ticks the boxes. Philippe Collin is from a Champenois family, but took to the cool, rolling hills around Limoux like a duck to water, realising vineyards were much cheaper down here.
