Rosé

Sourced from vines with an average age of 40 years, grown on sand, clay and pebbles, the fruit is fermented at 16 degrees then spends four months in concrete and stainless steel before release. It's a deep pink colour, although it's not overly full in the mouth. It has a firmness and savoury aspect that many others shy away from - intensely fruity but very dry, with a long finish. It's a sinewy, powerful style, even for Tavel. Strong and assertive.
