Domaine Cauhapé, a 40ha estate, is generally regarded as the finest producer in Jurançon. Winemaker Henri Ramonteau is a master of both dry and sweet styles, with Ballet d'Octobre being the estate's entry-level sweet wine. Produced from 100% Petit Manseng, harvested at the end of October, this has remarkable clarity and finesse. Not overly-sweet, and with fresh, cleansing acidity on the palate, it is a delicious doux which is great as an aperitif or an accompaniment to cheese and desserts.
