Oliver Zeter, Sauvignon Blanc Fume, Pfalz, Germany, 2019

Using fruits from the producer's oldest vineyards, the 'Fumé' version of Sauvignon Blanc was fermented in oak barrels then aged in tank. Passion fruit and mango with a hint of green herbs, seasoned with coconut and smoke. Crisp green apple, asparagus and limey acidity (6.4 g/l) on the palate, with mouth-smacking buttery notes from aging on fine lees. Lime curd follows to a heart-warming ending.
