Rescued from near extinction by Lyrarakis, who planted Dafni in the high-altitude Psarades vineyard in the early 1990s, this variety takes its name from the laurel plant – Dáfni in Greek – yet here the aroma strikes more as sage: pungent, intense and carrying the hot winds of the Mediterranean into the glass. The palate is far more restrained, offering gentle, ripe stone fruit, a whisper of pine needle and a hint of roasted fennel that calls to mind oven-baked bream, Greek style. Wild-fermented in steel and given a brief spell on the lees, it is a wine defined by varietal clarity, with a fluid texture and discreet, lingering persistence.
