First founded in 1893, the brewery adopted the 'Hatsumago (meaning 'first grandchild' in Japanese)' name in 1930 following the birth of the family's first grandchild. The producer is known for the traditional Kimoto method of Sake brewing. This is a funky, vinous Honjozo Sake, featuring a nose of bruised apple, miso paste and sour berry candy, which follow to the mild palate, in addition to the usual melon sweetness, almonds and citrus zing. Complex and fun.
