Nanbu Bijin, Tokubetsu Junmai Sake, Japan

The brewery Nanbu Bijin was founded in 1902 in Ninohe city, Iwate. This special pure rice Sake has been pasteurized for only once in bottle to best preserve the complex aroma of the raw Sake. Ripe yellow apple and a hint of savoury bacon on the nose, it's gentle and smooth on the palate, with sweet pear and melon, balanced by citrus peel bitterness and mild acidity.
