The fragrant Kaze no Mori (meaning ‘winds in the forest') is made from Hattann Nishiki rice from Hiroshima Prefecture polished down to 50%. A relatively low alcohol sake at only 14% compared to the usual 15 – 16%, you can see why it is popular. Its fresh pear and vanilla fragrance and sweet, smooth exotic fruits and richness of texture make it readily accessible and satisfying in an overtly fruity style, even though it doesn’t have the umami dimension.
