The base wine was fermented and aged in stainless steel tanks, with a second fermentation in bottle followed by 20 months of ageing on lees. The wine was disgorged with no dosage. Aromas of Japanese citrus and white peach with a hint of yeastiness. The depth of white fruit flavours are refreshed by the crisp acidity.
