Founded in 1899, SoRyu is named after the Azure Dragon, one of the four guardians of the Chinese Constellations. This ‘Curious Type N’ Koshu was fermented and aged in stainless steel tanks. It has reserved aromas of biscuit, smoke, mineral, apple and lime on the nose, followed by crunchy green apple on the palate with a rounded texture. The acidity sits at 6.8g/l, which gives it a refreshing tone, and lime-peel bitterness follows to the finish. A lovely entry level Koshu to try with comparatively affordable price.
