The key difference between this and the standard Sauvignon Blanc is that the Wild version is 100% barrel-fermented with wild yeasts - it's effectively racked to barrel and left to its own devices. Two-thirds undergo malo for a creamier mouthfeel, and the oak is mostly old and lightly toasted. There's a wonderful, heady Belgian beer and bretty spice aroma, with hints of bacon fat and black and white pepper. This continues on the palate, with a soft, round character defined by mineral, saline acidity and some tight guava and peach fruit. It's not as long on the finish as the Sauvignon Blanc 2018, suggesting that it's still quite buckled down and just needs a bit of time. Perhaps the 2010 will show how this should open up in a few years...
