Aged in Amontillado casks - one year under flor followed by one year oxidatively - this is an expression of Perruno that strongly makes the case for reinvesting in this variety in Jerez. Deliciously nutty, with walnut (fresh and pickled), hazelnut shell and toasted almonds, followed by cherry leaf and juicy red apple. Spicy layer of cardamom, aniseed and cinnamon over roasted coffee and dark chocolate. Long and grippy, with a long tail of clementine zest, dried sage, basil and pine seeds.
