Txakoli is always white and spritzy, isn’t it? Not when it comes from the Bizkaia region, close to Bilbao, and especially not when it comes from Doniene Gorrondona. Key to Hondarrabi Beltza is its acidity - not surprising given the Atlantic vineyards - and its rustic tannins. Try it out with spicy sausage and it works perfectly. Note the welcome lighter alcohol.
