Must-try red - Guímaro means 'rebel' in Galician and Pedro Rodriguez has taken on that mantle at this exciting estate, one of the first to join the new Ribeira Sacra DO in 1996. This is the most basic of the reds he makes, from high-altitude, old-vine Mencía blended with Caiño and Merenzão (Trousseau). It's unashamedly pure and juicy, with crunchy, ripe, blue and purple fruit, floral perfume and a mineral tang from the slatey soil. A delicious discovery.
