Made from local grape Forcallà which is planted in the western-most part of Fontanars at 700m on sandy soils, this is 50% whole bunch-fermented, and aged 10 months in 5,000-litre and 500-litre barrels. It's very pretty, with a heady combination of lavender, rosemary and wild fennel – a true reflection of the Valencian forest. The palate is somewhat bloody and meaty, belying its very approachable 13% alcohol. Light on its feet with a delightful dried strawberry finish, this is delicious, with immediate appeal.
