The Pinot grapes were destemmed and co-macerated for 20 hours before being partially fermented in oak and aged for eight months in used Burgundian barrels. Once bottled, the rosé was aged on lees for 20 months. Deep salmon pink in color, it boasts strawberry jam and red cherry compote on the nose, along with creamy yeast and dried rose petals. On the palate, biscuit, strawberry, and blackberry juice mingle with red apple peel and nutty umami, seasoned with sweet spices. Despite the sweet fruits, the residual sugar sits at merely 1g/l, giving the sparkling rosé a crisp and cleansing finish.
