A floral, pretty nose of red cherry and sweet peach emerges, thanks to aromatic yeasts used during a slow fermentation. Surprisingly saline and rounded on the palate, it presents vibrant strawberry notes and grapefruit zest for freshness. This Pinot Noir rosé hasn't undergone malolactic fermentation, thus retaining its bright acidity and drive. However, it has been left on lees for some time (bottled in spring 2023), providing the wine with a textured mouthfeel and extra depth.
