Chalk and minerals on top of sourdough, bruised apple and spiced apple pie. Intense breaded citrus and yellow apple flavours, with piercing acidity as the backbone. Fine bubbles give a smooth and round mouthfeel. Precise and impressive, followed by a long, limey finish. Aged 33 months on lees, the Classic NV is made predominantly with grapes from 2016, the third harvest from the estate's Burge's Field vineyard.
