This estate Cabernet is sourced from the Savoy Vineyard in Anderson Valley for Greg and Carrol Lindstrom, who own a property in the Stags Leap District, situated on a knoll behind Odette. Celia Welch has been crafting this Estate Cabernet since 2005. The fermentation process begins with native yeast before transitioning to a Dijon yeast, occurring in open-top stainless steel tanks with a few punch-downs in the initial days. The wine is then aged in 40% new French oak, primarily from François Frères, for about 10 months. The small clusters from a modest crop result in a highly concentrated and lovely Pinot Noir. It features ripe Bing cherry fruit, rich cedarwood spices, and gorgeous rose petal florals with hints of conifer. Medium to full-bodied, it exhibits significant tannic character and extreme length, with flavours of toffee, espresso bean, sandalwood, black truffles, and black tea quality.
