Matt first made Chardonnay under this label in 2020, and with the 2023 release, he delivers a wine of remarkable laser focus. White-flower aromatics lead, supported by subtle citrus, elegant cedar spice and a delicate thread of Asian spice. A sleek undercurrent of tangerine oil and lemon zest runs through the palate, joined by lime blossom and crushed slatestone minerality on the long, juicy, gently spicy finish. The wine is 100% barrel-fermented. Ageing comprised 20 months in 30% new French puncheons (Billon) and 70% neutral French barrels. Some barrels undertook malolactic fermentation, while others had it blocked. The wine spent 14 months on lees before being racked—with lees—to stainless steel for a further six months’ ageing prior to bottling.
