Five months in stainless steel, rack dirty and take a reductive approach to the winemaking, says Chad Silacci, the very talented winemaker. These very rare SLH Riesling vines are about 21 years old. Effusive on the nose, lots of peach ring candies, honeyed apricots and ripe tropical fruits. The fruit was picked at 19.5 Brix and 2.9 pH, so a little bit of sweetness helps Chad achieve that roundness to balance the soaring acids.
