Disgorged February 2025; aged more than six years on the lees prior to disgorgement; dosage 8 g/L. The wine is beautifully savoury, building out of the glass with evocative white truffle and foraged chanterelle notes, followed by apricot and toasted almond nuances. On the palate, everything comes together with elegant saline minerality, a subtle sanguine character, and a brilliantly rich, creamy mousse. As with all of these sparkling wines, there is a constant thread of energy and tension, the creaminess driven by malolactic fermentation (or at least a partial malo). It is also worth noting that at Scharffenberger Cellars, the wines are largely sourced from a 50/50 split of grower fruit and estate vineyards. This is a lovely wine now, yet one that will continue to reward cellaring as further layers of complexity emerge over time.
