50% Pinot Noir and 50% Chardonnay, made in the traditional method. One-third was fermented in neutral barrels, and the remainder in stainless steel. Aged up to six years en tirage before release. The dosage was 6 g/L. It has a very pretty lemon-gold colour. Leads with wonderfully rich baked apple, brioche, and buttered croissant balanced by spring flowers and salty minerality. Rich and creamy mousse unspools with coiled acidity and more of that baked orchard fruit, which has a deep and lasting quality on the palate—a lengthy and focused finish of candied mineral and autolytic notes.
