Always Sémillon-dominant, sourced from the winery’s estate Dollarhide vineyard with just under one-third fermented in stainless steel and the balance barrel-fermented in 20% new French oak, then aged on the lees for approximately five months. Tasted in January 2025, this is an incredibly satisfying wine, delivering the richest, most mouth-coating texture of the Sauvignon Blancs in the range. There is a wonderful yumminess and umami factor here, layered with white floral notes, crushed Marcona almonds, and that signature saline-acid tension. Poached pear, yellow apple and apricot emerge through the mid-palate, carrying into a long, fruit-driven, mineral-rich finish. A deeply appealing and confidently built white.
