The Cuvée 85 is a full circle homage to the first vintage of sparkling wines from Dr Konstantin Frank, whose son, Willy, planted Champagne varietals in 1979 in New York's Finger Lakes. This wine honours that pioneering spirit. Yeasty aromatics give heft and depth to the delicate white florals, pineapple upside-down cake, and taut, fresh-cut apples. This wine is made with the same approach as the 2021; however, this particular lot is finished off with a dosage, from that 1985 vintage, New York’s first sparkling wine crafted from Champagne's traditional varieties. There's a sense of elegance and unctuous note to the palate. Honeyed apples, pear tart and complex savoury spice to finish.
