It's easy to forget about Aligoté when it comes to Burgundy, but the grape can be a brilliant go-to when you need a good-value white with moderate alcohol, a lively aromatic profile and crisp acidity. That acidity will help cut through fatty foods or soft cheese, the lemon peel notes providing a refreshing lift. As well as the zesty citrus character, the wine has an underlying gunflint smokiness, and subtle white flower perfume.
