Things get a bit more serious with the ‘black beret’: 70 per cent Tannat with 15 per cent each of Pinenc (Fer Servadou) and Cabernet Sauvignon. It’s mildly earthy and savoury on the nose, with a taut, sour, searchingly savoury palate. Not tannic, but concentrated and gathered: proper food wine
