This single-vineyard Assyrtiko from northern Greece is an absolute bargain – snap it up while you can. It's the perfect wine for summer: pale in the glass, dry and lemony. The fruit is grown at altitude using sustainable practices, and the wine is aged for three months on the lees in stainless steel, with lees stirring. In the glass, enjoy elegant citrus aromas with a suggestion of wild herbs, good minerality and a hint of salinity. It's surprisingly rich and structured, and as well as pairing it with fish, you could try more exotic cuisine. The blend includes 10% Sauvignon Blanc, but this doesn't dampen the unmistakable Greek character. Try it as an alternative to Viognier.
