Cava is another sparkling wine made by the Champagne method – this vintage-dated example is made from the traditional Cava grapes (Macabeu, Xarel.lo and Parellada), and spends a minimum of nine months on lees in the bottle following the second fermentation. You can find non-vintage Cava at a lower price, but it won't have the same finesse as this fine, green apple and slightly nutty expression. 8g/L dosage.
